In a bowl, pour the chickpea flour, water, and extra virgin olive oil, and mix with a whisk to avoid lumps.
Then season with salt, pepper, and transfer the liquid mixture to a greased or non-stick pan.
Peel the yellow onion, cut some thin slices, place them on the surface of the pan, and add some rosemary needles.
Bake the farinata in a preheated oven at 356°F and cook for 20 minutes on a ventilated mode, until golden. Serve it hot.
