The soft apple cookies are easy to prepare, simple, and delicious. Perfect for breakfast, as a snack, or even after a meal. A very soft dough made with all-purpose flour, sugar, butter, eggs, baking powder, lots of apple pieces, and a touch of cinnamon.

- 12 oz Golden apples (net weight)
- 1/2 cup granulated sugar
- 1/2 cup butter (at room temperature)

Steps
To prepare the soft apple cookies…
First, peel the apples, cut them into pieces, removing the seeds, then prepare the dough.
In the bowl of the stand mixer (or a bowl with electric beaters), break the eggs, add the granulated sugar, and the room temperature butter cut into cubes.
Start mixing the ingredients until well combined. Then, gradually add the all-purpose flour and the baking powder. Continue to mix the dough until it is smooth and homogeneous.
Now add the previously cut apples, also add the ground cinnamon, and mix with a spoon.
Line two baking sheets with parchment paper, then using two spoons, take a little dough at a time and form small heaps spaced apart, they don’t have to be perfect. Continue until the dough is finished.
Bake the cookies in a preheated oven at 340°F and bake them for 20 minutes in fan mode.
Once the cookies are baked, remove them from the oven and let them cool, then sprinkle them with powdered sugar.
