In one pot, heat water to boil for the vegetables, and in another pot heat water to boil for the farro.
Meanwhile, clean the cauliflower and broccoli, separating the florets. Also clean the Brussels sprouts by removing the base and any damaged outer leaves. You can leave them whole or cut them in half as you prefer.
Wash the vegetables and boil them in boiling water. Cook them for about 10-15 minutes, checking doneness by piercing with a fork.
In the other pot, when the water boils, add the farro and cook it according to the package instructions.
When the vegetables are cooked, drain them and put them in a pan with extra virgin olive oil, salt, and pepper. Sauté them for a few minutes, adding the cooked and well-drained farro.
Serve the farro with cauliflower, broccoli, and Brussels sprouts, adding the feta cut into cubes and sliced almonds on top as desired.
