The spicy stir-fried vegetables are light, flavorful, and easy to prepare. Delicious vegetables like bell peppers, carrots, cabbage, and zucchini are cooked in a pan and seasoned with curry, fresh ginger, sesame seeds, and soy sauce. Ingredients

  • 1.8 oz red bell pepper
  • 1.8 oz savoy cabbage
  • 1.8 oz dark zucchini
  • 1.8 oz carrots
  • 1 fresh scallion
  • 1 tbsp soy sauce
  • to taste fresh ginger
  • to taste sesame seeds
  • to taste curry
  • to taste extra virgin olive oil

Steps

To prepare the spicy stir-fried vegetables…

  • Clean the scallion by removing the roots and the damaged green part, wash it, and slice it. Also, clean the carrots by removing the ends, peel them with a peeler, wash them, and cut them into sticks.

  • Wash the bell pepper, cut it into sticks, removing the seeds and the hard white part. Then wash the zucchini, remove the ends, and cut them into sticks as well. Finally, peel the savoy cabbage, wash the leaves and cut them into strips.

  • In a pan, pour the extra virgin olive oil and sauté the scallion, then add all the prepared vegetables and a little water. Cover with a lid and cook for about 10 minutes until they are softened.

  • Then remove the lid, let the water evaporate, then add the curry powder, peeled and chopped fresh ginger, and soy sauce. Mix with the wooden spoon.

  • Serve the spicy stir-fried vegetables hot, adding sesame seeds.
