Ingredients for Turtres Pancake Recipe

  • 3 1/2 cups rye flour
  • 1 2/3 cups all-purpose flour
  • 4 1/4 cups milk
  • 2 tbsps butter
  • 3 eggs
  • 3 tbsps sunflower oil
  • 7 oz spinach (weight already boiled)
  • 5 1/4 oz ricotta
  • 1/2 cup fresh liquid cream
  • 1 onion
  • 1 tbsp butter
  • to taste salt

Preparation for Turtres Pancake Recipe

  • To prepare the turtres pancake recipe, start by boiling the spinach, then squeeze them very well and chop them.

    Finely chop the onion and sauté it in butter for a few minutes in a large pan.

    Once sautéed, add the chopped spinach, cream, ricotta, and a pinch of salt, let everything gain flavor and mix well. Set aside.

  • Prepare the pastry by placing all the ingredients in a large bowl, mix well to combine everything, making sure there are no lumps.

    Form a ball and let it rest covered with plastic wrap for at least 1 hour in the refrigerator.

  • After the resting time, roll out the pastry for the turtres pancake recipe very thin, cut out circles of 2 inches in diameter and place a generous teaspoon of spinach and ricotta filling on half of them.

  • Close with the other circle by pressing lightly on the edges. Once all the turtres are ready, heat plenty of sunflower oil very well for frying.

  • Fry the pancakes a few at a time, turning them only when they are golden on one side, let them brown on the other side and drain them on absorbent paper to remove excess oil.

  • Serve them still piping hot.

How to store Val Badia Turtres Pancakes

Turtres should be eaten hot as soon as they are made, but they are also delicious at room temperature.

If you have any left, store them in an airtight container for 2 days in the refrigerator.

You can freeze the turtres for 2 months, before eating them, pass them in the oven.
