Halloween Nachos

The Halloween nachos are a savory snack to enjoy as an appetizer on Halloween night. Tasty blue corn tortilla chips, even though the color tends toward dark purple, ready to serve hot with a Mexican-style sauce and melty mozzarella. The sauce is made with tomato puree, jalapeno peppers with a slightly sweet and spicy flavor, very easy to prepare.

Ingredients

  • 7 oz tomato puree
  • 7 oz tortilla chips (blue corn)
  • 3.5 oz mozzarella for pizza
  • 3.5 oz Jalapeño peppers (in brine, drained)
  • 1 small white onion
  • 1 tablespoon white wine vinegar
  • 1 tablespoon granulated sugar
  • to taste extra virgin olive oil

  • to taste black pepper

Steps

To prepare the Halloween nachos…

  • First, prepare the sauce that will be used to dress the tortilla chips. Peel and slice or chop the onion thinly.

  • In a pan, pour the extra virgin olive oil and heat it, then add the sliced onion and sauté it.

  • When the onion is golden, add the granulated sugar and deglaze with white wine vinegar, allowing it to evaporate.

  • Now add the drained jalapeno peppers in brine, the tomato puree, salt, pepper, and a little water. Cook for a few minutes until the sauce is thick.

  • Finally, place the blue corn tortilla chips in a non-stick tray or lined with parchment paper, top with the prepared tomato and jalapeno sauce, and diced mozzarella for pizza.

  • Bake the nachos in a preheated oven at 340°F and cook them on fan mode for about 10 minutes until the mozzarella is melted. Serve them hot.
