Christmas Tree Christmas Cupcakes

Hello friends, today I present these delicious Christmas tree cupcakes to prepare for the holidays and impress both the little ones and the adults. They are coffee muffins decorated with colored mascarpone cream and an ice cream cone.

Ingredients for the Coffee Muffins

  • 2 eggs
  • 1.25 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 4 tbsp butter
  • 2 tbsp coffee
  • 1/2 cup milk
  • 2 tsp baking powder
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 12 ice cream cones
  • 1.5 cups mascarpone (Or cream cheese)
  • 3 tbsp powdered sugar
  • green food coloring
  • 1.5 cups heavy whipping cream

Steps for the Christmas Cupcakes

  • First, prepare the muffins in advance. In a saucepan, melt the butter with the milk and coffee, and when everything is melted, turn off the heat and let it cool. Meanwhile, in a bowl, beat the eggs, vanilla extract, and granulated sugar with electric whisks for a few minutes. Gradually add the all-purpose flour, mixing from bottom to top, then slowly incorporate the milk and coffee mixture, mixing carefully. Finally, add the baking powder. Once you have a smooth mixture, pour it into paper cups placed in a muffin pan, filling them 3/4 full. Bake in a preheated static oven at 350°F for about 20 minutes or until a toothpick comes out clean. You can also fill them with Nutella if desired. Remove from oven and let cool.

  • In a bowl, whip the mascarpone with the powdered sugar and chilled liquid heavy cream from the fridge until the mixture is frothy and smooth. Divide the mixture into two bowls, adding green food coloring to one and mixing carefully. Once you have the two mixtures, place them in separate piping bags; use a plain nozzle for the white frosting and a star nozzle for the green one. Take the cooled muffins and spread a layer of white frosting on each muffin, as shown in the photo. Then, place an inverted cone on top and completely cover the cones with green frosting, trying to simulate the tree foliage. Dust with powdered sugar and serve.
