The marinated roast chicken has a particular flavor given by the marinade itself, and the meat is cooked just right and very tasty, at my house they went for seconds.
One of the most beloved main courses for all of us Italians is roast chicken, and marinated with the right spices it gains a lot in flavor, very simple to make so if you are new to the kitchen, don’t worry, you’ll make a truly special main course.

Ingredients for Sweet and Sour Marinated Roast Chicken
- 2 chicken thighs (with the drumstick)
- 4 teaspoons Dijon mustard
- 4 teaspoons honey
- 2 teaspoons apple cider vinegar
- 4 tablespoons extra virgin olive oil
- 0.7 oz lemon juice
- 2 teaspoons aromatic herbs (Sage, rosemary, and oregano)
- 1 clove garlic
- 2 pinches salt
- 3 potatoes
Preparation of Sweet and Sour Marinated Roast Chicken
To prepare the marinated roast chicken start by dividing the chicken drumsticks, set them aside, if you want you can remove the skin for less fat, but with the skin, it is much tastier.
In a large bowl that can contain the chicken, prepare the marinade by mixing extra virgin olive oil, mustard, honey, and the rest of the ingredients, chop the aromatic herbs together with the garlic cloves and mix with a whisk to incorporate everything.
Place the chicken in the bowl, mix using your hands, cover with plastic wrap and place in the refrigerator to marinate for at least 1 hour.
After the marinating time preheat the oven in static mode to 392°F, peel the potatoes and cut them into chunks, line a baking tray with parchment paper.
Drain the chicken pieces from their marinade and place them in the tray along with the potatoes, drizzle with a few tablespoons of marinade and bake for at least 40 minutes.
Turn both the chicken and the potatoes halfway through cooking to allow everything to soak up the cooking juices and to brown just right.
Once the cooking is complete, remove the marinated roast chicken from the oven, let it rest for 5 minutes before serving still very hot and..

How to store the Sweet and Sour Marinated Roast Chicken
The marinated roast chicken 🍗 can be kept in the refrigerator for 3 days in a closed airtight container. You can freeze the marinated roast chicken once cold.
If you want to make the marinated roast chicken even lighter, remove the skin from the chicken.
