Ingredients for brioche plumcake with yogurt
- 2 1/2 cups All-purpose flour
- 2 tbsps honey
- 1/2 cup milk (also skimmed, soy or vegetable milk as preferred)
- 1 cup yogurt (can be fruit-flavored)
- 1 packet baking powder
- 3 eggs (medium)
- 2/3 cup sugar

- 1 Electric whisk
- 1 Spatula rubber
- 1 Kitchen scale
- 1 Sieve
Preparation of brioche plumcake with yogurt
To prepare the brioche plumcake with yogurt, start by preheating the oven to 390°F in static mode, butter and flour a plumcake mold.
Beat the eggs with the sugar until they form an almost white foam, using a stand mixer or an electric whisk.
Add the honey, yogurt, then alternate a bit of flour that you have sifted multiple times together with the baking powder and a bit of milk, try to always finish with the flour.
Mix everything well, using a rubber spatula with movements from bottom to top to avoid deflating the eggs previously whipped.
Take your batter, which should be quite flowing and not too thick, and put it into the mold. Bake in the middle rack of your oven for 35/40 minutes.
After 30 minutes, do the toothpick test, it should come out dry, otherwise, extend the baking time as needed.Remove the brioche plumcake from the oven and let it cool to room temperature before removing it from the mold.
