The basic crazy dough recipe is excellent for savory pies, strudels, snacks, and various treats; a basic dough that is prepared very quickly, very easy, and guaranteed to succeed.
Also called pulled dough as you can roll it very thin and stretch it with your hands until you can see your fingers through it without breaking.
This way you’ll have a base for savory pies that won’t absorb the liquids from vegetables, remains super crispy after baking, and if you try making spring rolls, you will be truly amazed!!

Ingredients for Basic Crazy Dough
- 2 cups all-purpose flour
- 2 tablespoons extra virgin olive oil
- 1/2 cup water (at room temperature)
- 1 pinch salt

Preparation of Basic Crazy Dough
To make the basic crazy dough, put the sifted flour in a bowl, preferably glass, add the pinch of salt and the oil, and start working with your hands.
Gradually add the water along the edge of the bowl and continue kneading with your hands until you have a firm dough.
Turn the dough out onto the work surface and knead vigorously (it’s possible not all the water is needed).
You should get a smooth and compact ball, fairly shiny, put it back in the bowl and cover it with plastic wrap.
Let it rest for at least 30 minutes at room temperature.
After the resting time, roll out your crazy dough with the rolling pin or pasta machine depending on how you want to use it.
You’ll see that even if you roll it very thin, it won’t break. Finally, line your savory pie tin, fill it, and.. ENJOY YOUR MEAL

If you need to store it, wrap it in plastic wrap and place it in an airtight container for 1 day in the fridge.
Before using it, remove it from the refrigerator and let it come to room temperature before rolling it out.
