- 8 slices chicken breast
- 1 oz dried mushrooms (mixed)
- 2 shallots
- 1 red bell pepper
- 1 tbsp pickled capers
- 10 baked black olives
- 1 stalk white celery

To prepare the chicken slices with mushrooms, start by soaking the mushrooms in warm water for 20 minutes. After that time, drain them and reserve the soaking water.
In a large pan with a generous drizzle of extra virgin olive oil, sauté the shallots cut into 2 or 4 parts if they are large. After two minutes, add the dried mushrooms.
Now add the finely chopped celery stalk and half of the finely chopped red bell pepper. Stir to season, then add 2 tablespoons of mushroom soaking water and let wilt uncovered for 6 minutes.
Still on high heat, add the chicken slices, let them brown on one side, flip them and brown on the other side.
Then add the capers, whole pitted olives, stir everything a bit while turning the chicken slices. Add more extra virgin olive oil if needed.
Continue cooking, seasoning everything towards the end, and turning the chicken slices 2 more times to season them well. After about 20 minutes, the chicken slices with mushrooms will be golden outside, very tender, and juicy inside, and will have absorbed all the flavor of the seasoning.
