Cherry Liqueur from Pits Only

Ingredients for Cherry Liqueur

  • 2.2 lbs cherry pits
  • 500 ml pure alcohol
  • 1.5 cups sugar
  • 2.5 cups water

Preparation of Cherry Liqueur from Pits Only

  • 1- Preparing the cherry liqueur from pits only is really easy. We just have to wait for maceration, but the rest is not complicated at all. I used to watch my grandmother making it, and as a child, I would always check the bottles in maceration. Let’s see what we need to do.

  • 2- Place the washed and dried cherry pits in a jar or bottle with a hermetic seal. Add the alcohol, seal, and store in a cool, dark place for at least 20 days.

    After 20 days, check that the color of your alcohol is a deep red. If not, leave it to macerate for another 5 or 6 days.

  • 3- After the maceration period, prepare a syrup by dissolving the sugar in water until it has reduced slightly to become a bit thicker than water. Then turn off the heat, add your alcohol with the cherry pits to the pot with the syrup, and let it cool to room temperature with the pot covered.

  • 4- At this point, take sterilized, dry bottles and bottle your cherry liqueur, straining it through a fine-mesh strainer to remove the pits and any impurities.

    Seal your bottles and store in a dark, cool place for 1 month before enjoying your cherry liqueur, shaking the bottle occasionally to prevent the syrup from settling at the bottom. Enjoy your cherry liqueur!!

Storage
