Ingredients for creamy spaghetti with olives and cream cheese

  • 11 oz spaghetti
  • 7 oz cream cheese (Philadelphia or similar)
  • 1 oz green olives
  • 1 oz taggiasca olives
  • 2 pinches salt
  • to taste extra virgin olive oil
  • to taste black pepper
  • 1 sprig parsley (optional)
  • 1 bunch basil
  • 4 tablespoons grated Parmesan cheese

Preparation of creamy spaghetti with olives and cream cheese

  • To prepare the creamy spaghetti with olives and cream cheese first bring water to a boil to cook the spaghetti, without adding salt.

  • Meanwhile, pit the olives, chop them into large pieces, and place them in the immersion blender cup.

    Add the cream cheese or your preferred creamy cheese and activate the blender to form a cream.

  • Add the oil, basil, and parsley, well washed and dried.

  • Blend for a few more moments until you reach the desired consistency, at this point, if you like, you can also add 1 teaspoon of grated lemon zest which will provide freshness.

  • Complete by incorporating the grated cheese with a fork.

  • When the water reaches a boil, cook the spaghetti, leaving them al dente.

  • Drain them in a large bowl, season with the pesto, and if too thick, add a few tablespoons of the pasta cooking water.

  • Serve them immediately while hot.
