Ricciarelli a simple and delicious recipe. The recipe I want to tell you about today is for delicious almond paste cookies perfect as a Christmas treat. This recipe is inspired by the famous Ricciarelli from Siena made with only 3 ingredients: almonds, sugar, and egg whites. A simple recipe that requires resting the dough in the fridge for at least 12 hours for perfect results. Lots of powdered sugar and delicious elongated cookies so good they melt in your mouth. These almond cookies are perfect as a dessert at the end of a meal, as a sweet treat, and as a delightful Christmas gift, because these are always the most appreciated gifts for me. Delicious Christmas Cookies like Gingerbread Men or Spiced Chocolate Cookies. For this recipe, you’ll need blanched almonds, but I’ll also explain how to blanch them easily. Ingredients for Almond Paste

  • 7 oz blanched almonds
  • 1 3/4 cups powdered sugar
  • 2 egg whites
  • 1 orange zest (untreated)
  • 1 tbsp potato starch
  • 1/2 cup powdered sugar

How to Prepare Ricciarelli

  • To achieve perfect almond flour, I recommend placing the blanched almonds in the freezer for an hour. Then transfer them to a mixer, add a tablespoon of potato starch, and blend to obtain a delightful almond flour. Slightly beat the 2 egg whites with a whisk or simply with a fork until you have a foamy mixture.

  • Add the grated zest of an untreated orange, 1 3/4 cups of powdered sugar, and the almond flour. Mix to create a soft dough. Wrap the dough in plastic wrap and let it firm up in the fridge for 24 hours or more. Retrieve the dough and work it on a work surface dusted with powdered sugar. Form a roll about 1 1/4 inches wide.

  • Cut slices of about 0.7 oz and, always dusting with powdered sugar, shape them into diamonds with your hands. Prepare them all in the same way and arrange them, slightly spaced apart, on a baking sheet lined with parchment paper. Lightly moisten the treats with water and decorate them with plenty of powdered sugar.

  • Bake the almond Ricciarelli in a preheated static oven at 302°F for 5 minutes. Then raise the temperature to 338°F and continue baking for another 5 minutes. When many small cracks appear on the surface, lower the temperature again to 302°F and let them bake for another 5 minutes. In total, the cooking time will be 15 minutes, positioning them in the middle part of the oven. When you take them out of the oven, they are very soft, let them cool before transferring them to a tray.

  • Heat some water in a saucepan, bringing it almost to a boil, and turn off the heat. Dip the almonds a few at a time in the water. Leave them in the water for 1-2 minutes, drain them, and peel them easily. Proceed in this way a few at a time and let them dry well simply in the air.
