For the cheese, I used goat cheese, but robiola, ricotta, or fresh cream cheese are also great options. As a dressing, I chose the classic one I always use when preparing bresaola: extra virgin olive oil, lemon, and plenty of parmesan shavings. Ingredients for Bresaola with Goat Cheese and Parmesan

  • 8 slices bresaola
  • 3.5 oz goat cheese
  • 1 oz grated parmesan
  • 1 pinch pepper
  • 1 oz parmesan (in shavings)
  • to taste extra virgin olive oil
  • 1/2 lemon

How to Prepare Bresaola Tortelloni

  • Mix the goat cheese with a pinch of pepper and the grated parmesan in a small bowl. Place the bresaola slices on the work surface. Put a teaspoon of cheese in the center of each slice.

  • Fold the bresaola slice in half over the filling. Press all around to seal. Slightly fold the curved part and then join the two ends by pressing gently. Prepare all the Bresaola Tortelloni in the same way.

  • Place them on a plate on a bed of salad or arugula. Season with extra virgin olive oil, lemon juice, and parmesan shavings. Let them marinate for at least 30 minutes before serving
