How to make the Shortbread Christmas Trees
You can prepare the dough by hand or with the help of a mixer. Mix the butter cut into small pieces with the sugar and flour in a bowl. Add an egg, the grated zest of one untreated orange, and half a teaspoon of baking soda.
Quickly knead until you have a soft but not sticky dough. Form a ball, wrap it in plastic wrap, and let the shortbread dough rest in the fridge for at least 30 minutes or longer.
Roll out the dough on a lightly floured work surface to a thickness of 1/8 to 3/16 inches. Cut out many cookies with a tree-shaped cutter. Roll out the scraps to make more cookies. Arrange the cookies slightly apart on a baking sheet lined with parchment paper.
Bake the tree cookies in a static oven preheated to 340°F for 12-14 minutes. Do not let them darken too much. Let them cool. Melt the dark chocolate cut into small pieces in a double boiler.
Transfer the melted chocolate into a disposable piping bag. Cut a very small piece from the tip to create a small hole. Decorate the Tree Cookies with the chocolate as desired. Before the chocolate hardens, decorate with colorful sprinkles of all kinds.

Loredana’s Tips
You can prepare the shortbread in advance and store it in the fridge for 2-3 days, or you can freeze it.
If you want to prepare the cookies in advance, do not decorate them with chocolate. You can keep them in a container for a few days and decorate them last with chocolate and sprinkles
