Ingredients for Bread Soup
- 1.1 lbs homemade bread
- 1.1 lbs potatoes
- 1.54 lbs turnip greens
- 2 cloves garlic
- 4 leaves bay leaves
- 3 hot peppers
- to taste extra virgin olive oil
- to taste salt
How to prepare Bread Soup with potatoes and turnip greens
Clean the turnip greens. Remove the larger, damaged leaves and the base of the stems. Cut them into pieces. Wash them thoroughly under running water and let them drain. Peel the potatoes, wash them, and cut them into not too small cubes. Fill a large pot, preferably earthenware, 1/3 full with lightly salted water and bring it to a boil.
Add the potatoes, garlic cloves, and bay leaves. Let them cook for about 15 minutes. Add the turnip greens and chopped hot peppers to the pot and continue cooking for another 10 minutes.
Cut the bread into thick slices and divide each slice into 2-3 parts. Add the bread to the pot as well. Let it cook for another 2 minutes and turn off the heat. Cover the pot and let the Bread Soup rest and soak for 5 minutes. In this way, the flavors come together, and the ingredients blend, creating a delicious dish. Serve the Bread Soup with plenty of extra virgin olive oil.

For an even tastier dish, make a sauté with oil, garlic, and chili pepper and season the Bread Soup with it. For perfect cooking, all the water must be absorbed; for this reason, I recommend, the first time you prepare it, not to add too much water; you can always add a little more if it dries out too much. As for the vegetables to add to the Bread Soup, you can also replace the turnip greens with arugula, chicory, or field herbs; it will be equally delicious.
