  • 11 oz pasta
  • 18 oz cherry tomatoes
  • 5 oz buffalo mozzarella
  • 2 cloves garlic
  • 3 tablespoons extra virgin olive oil
  • to taste salt and chili pepper
  • A few leaves basil
  • 1 pinch sugar

Steps to prepare pasta with cherry tomato cream and buffalo mozzarella

  • Wash the cherry tomatoes and cut them in half. In a pan, put oil and garlic, and when it sizzles, add the cherry tomatoes, salt, and a pinch of sugar if needed. Cook on low heat for 15-20 minutes. Remove the garlic.

  • In the blender, put 3/4 of the cherry tomatoes with the buffalo mozzarella and some basil. Blend until you get a cream.

  • Boil the pasta and drain it well al dente. Dress it with the cherry tomato cream, a drizzle of raw oil, chili powder, and some of the pasta cooking water. Sauté it for a couple of minutes and serve with the whole cherry tomatoes set aside.
