Christmas Star with almonds soft and delicious. My Christmas is filled with the scent of many sweets that start to fill my house always too early. I always have to prepare them ahead to then be able to share the recipe with you, so you can prepare it too. As you all know by now, my preferred sweets are always those simple ones, those that smell of home and goodness, the sweets that instantly fill my entire house with their irresistible aroma. Just like the Almond and Orange Cake I want to share with you today. A soft, tender, and fragrant cake that I baked in a star-shaped mold to make it perfect for Christmas and all the Holidays. A delicious aroma of oranges and almonds filled my house, and I couldn’t resist tasting a slice right away… unfortunately, I always have to do the “taste test”! Ingredients for the Christmas Cake

  • 2 eggs
  • 3/4 cup sugar
  • 2 oranges (untreated)
  • 3.5 tbsp butter
  • 2/3 cup almonds
  • 3/4 cup flour
  • 1/2 cup candied orange peel
  • 1/2 packet baking powder (8 grams)
  • as needed sugar crystals
  • 1/4 cup sliced almonds

What you need

  • Hand Mixer
  • Mold

How to prepare the Christmas Star with almonds and oranges

  • First, blend the almonds with a mixer. I prefer not to peel the almonds, but you can peel them first or use blanched almonds or substitute them with 80 grams of almond flour. Wash the oranges. Grate the zest of one orange and squeeze them to extract the juice

  • Beat the 2 eggs with the sugar using an electric mixer for 6-7 minutes until you have a light and frothy mixture. Add 1/2 cup of orange juice, the grated orange zest, and the melted butter. Mix.

  • Add the all-purpose flour, almond flour, baking powder, and diced candied orange peel. Mix well. Transfer the batter into a 500g star-shaped paper mold.

  • Decorate the surface with sugar crystals and sliced almonds. Bake the Star Cake in a preheated static oven at 350°F (180°C) for 35-40 minutes. Always perform the toothpick test to check the internal doneness of the cake.
