Ingredients

  • 7 oz broccoli rabe (already cleaned)
  • 5 oz burrata
  • 2 slices rustic bread
  • 2 filets anchovies in oil
  • extra virgin olive oil
  • salt
  • pepper (or chili)
  • basil

Tools

  • 4 Mini Cups
  • Pot
  • Strainer
  • Immersion Blender
  • Griddle or grill pan

Preparation

  • After cleaning and washing them, boil the broccoli rabe in salted boiling water for 6-8 minutes.

Drain and cool them under a stream of cold water.

  • Chop them coarsely and place them in the immersion blender cup. Add the anchovies, salt, pepper, and a drizzle of extra virgin olive oil.

Blend until you obtain a cream. If it turns out too dense, you can thin it with a little cooking water.

  • Toast the slices of bread on a grill pan or a griddle. When they are crispy, crumble them and drizzle with a little olive oil.

  • Now take your mini cups and distribute the broccoli rabe cream at the bottom. Cover with a layer of burrata (using the creamy inside part), and finally add the crumbs of bread.

  • The mini cups with burrata and broccoli rabe are ready to be served: garnish them as you like with some basil leaves and a drizzle of oil.

Tips and Variations

You can replace broccoli rabe with green broccoli, using the same procedure.

You can replace burrata with stracciatella, or with a ricotta mousse.

If you want to get ahead, you can prepare the broccoli rabe cream in advance and keep it in the refrigerator. However, I recommend composing the mini cups at the last moment.

FAQ

  • Can I omit the anchovies?

Sure, if you don’t like them, you can omit them without any problem.

  • How can I serve the dish if I don’t have mini cups?

You will need regular shot glasses, which we usually have at home. If yours are a bit smaller than the ones I used, you will get 6 portions instead of 4.
Alternatively, you can also use small plastic cups used for finger foods and appetizers (they can be purchased in many supermarkets).
