Ingredients for Ricotta and Spinach Swirls

  • 10 sheets phyllo dough
  • 14 oz ricotta
  • 10 1/2 oz spinach, frozen
  • 1/2 cup grated Parmesan cheese
  • 1/3 teaspoon nutmeg
  • to taste salt
  • 3 tablespoons sesame seeds
  • 1 1/2 oz vegetable oil (for brushing the sheets)

How to prepare Phyllo Dough Swirls with Ricotta and Spinach

  • Cook the frozen spinach in a covered saucepan over low heat for 6-7 minutes. This way, you won’t need to add extra water as the spinach will release enough as they thaw.

  • Chop the spinach on a cutting board with a knife, or if you prefer them finer, you can also use a blender. Add a pinch of salt, nutmeg, grated Parmesan cheese, and ricotta to the spinach. Mix well.

  • Gently lay the phyllo dough sheets on the work surface. Fold each sheet in half and brush them with vegetable oil to prevent drying out.

  • Place a roll of the filling on one side of each sheet. Roll up the sheet and brush it again with vegetable oil. Twist each roll into a spiral to form the stuffed swirls.

  • As you prepare them, place them slightly apart on a baking tray lined with parchment paper. Brush them with oil and decorate with sesame seeds. Bake the Phyllo Dough Swirls in a preheated static oven at 375°F for 20-25 minutes.
