Ingredients for the Shortcrust Pastry
- 1 egg
- 2/3 cup sugar
- 2 1/2 cups flour
- 4 tbsp butter
- 1/3 cup milk
- 1/2 tsp baking powder
- 1/2 lemon zest (untreated)
- 1 cup raspberry jam
- 2 1/2 oz amaretti
- 4 tbsp milk
- 4 tbsp sugar sprinkles
How to prepare the Shortcrust Pastry Roll with Jam
You can prepare the soft shortcrust pastry by hand or with the help of a mixer. Mix the butter in small pieces with the sugar and flour. Add the egg, milk, grated zest of half an untreated lemon, and baking powder.
Mix well to obtain a soft but not sticky dough. Form a loaf, wrap it in cling film, and let it rest in the refrigerator for at least 30 minutes.
Take the shortcrust pastry and roll it out on a large sheet of lightly floured parchment paper. This way it will be easier to roll it up later with the help of the parchment paper. Spread the raspberry jam, or the flavor you prefer, over the entire surface.
Then roughly crumble the amaretti over the jam using your hands. With the help of the parchment paper, gently roll the shortcrust pastry to form a filled roll.
Transfer the roll onto a baking tray lined with parchment paper. Brush it with milk and decorate it with sugar sprinkles. Bake the Roll with jam in a preheated static oven at 350°F for 30 minutes.
