THE BEST BAKED STUFFED PEPPERS YOU’VE EVER TASTED

Tasty and flavorful baked stuffed peppers. My kitchen is fully in autumn mood now, but I just realized today that I still had a recipe with green peppers to publish. You can still find them at the market, so you have time to prepare them. Simple and delicious oven-baked stuffed green peppers ready in minutes. For the filling, I used my mom’s simple recipe with bread crumbs, and I just added some anchovy fillets she didn’t use. I baked the peppers in the oven, but if you prefer, you can use an air fryer if yours is large enough. Let’s head to the kitchen and prepare some delicious baked green peppers together.

Ingredients for Oven-Baked Green Peppers

  • 1.32 lbs sweet green peppers
  • 5.29 oz breadcrumbs
  • 1 clove garlic
  • 4 fillets anchovies in oil
  • 2 tbsps capers
  • to taste extra virgin olive oil
  • 1 sprig parsley
  • to taste salt

How to Prepare Oven-Baked Stuffed Peppers

  • Cut the green peppers in half lengthwise. I prefer not to cut the stem, but if it’s too long, it’s better to shorten it a bit. Remove the seeds and inner filaments. Wash the peppers. I always prefer to wash them after cleaning to remove all the seeds. Let them drain on a cloth while you prepare the filling.

  • Crumble the breadcrumbs in a bowl. Add a finely chopped garlic clove, small pieces of anchovy fillets, chopped parsley, and capers. Add a drizzle of extra virgin olive oil and mix. Lightly salt the inside of the peppers and then fill them with the filling using a teaspoon.

  • Arrange them side by side in an oiled baking dish as you prepare them. Add a drizzle of extra virgin olive oil on top and pour half a glass of water into the pan on the side. Bake the green peppers in the oven at 374°F in static mode for 25-30 minutes.
