Ingredients for Country-Style Chicken
- 1.1 lbs chicken breast
- 1 oz flour
- 1 cup tomato passata
- 2 tbsps capers
- 3 fillets anchovies in oil
- 2.1 oz black olives (pitted)
- to taste extra virgin olive oil
- 2 chili peppers
- 1 clove garlic
- to taste salt
- 1 bunch parsley
How to Prepare Mediterranean Chicken
To prepare this recipe, you’ll need chicken bites that you can either buy ready-made or cut chicken breast into small pieces. Dredge the chicken bites in a bowl with flour. Pour 3-4 tablespoons of olive oil into a pan or skillet. Heat up and add the chicken. Let it brown on all sides over medium heat, turning it often with a wooden spoon.
Transfer the Chicken Bites to a plate. In the same pan, add a clove of garlic, chopped anchovies, and 2 tablespoons of oil. Let it brown for a minute over medium heat and add the tomato passata. Stir and adjust the salt. Also add the capers, sliced black olives, and chopped chili peppers.
Let the sauce cook over low heat for 4-5 minutes. Remove the garlic clove and add the chicken to the sauce. Let it cook for another 5 minutes over low heat. At the end of cooking, add the chopped parsley and serve.
