Ingredients
- 2 sausages
- 2 potatoes
- 7 oz champignon mushrooms (or other fresh mushrooms)
- Half onion
- extra virgin olive oil
- salt
- pepper

Preparation
Wash and peel the potatoes, slice them, and place them in a pan with a drizzle of extra virgin olive oil.
Add salt and pepper, cook them over medium heat until they are tender but browned on the outside (1).
Clean the mushrooms by removing all the soil, rinse them quickly, or wipe them with a damp cloth.
Chop them into pieces and cook them in a pan over high heat with a dash of oil and a pinch of salt.
Once cooked, add the onion, sliced. Lower the heat and continue cooking for a few more minutes until the onion is soft (2).
Combine the potatoes with the mushrooms and onion, and keep warm.
Take the sausages and dry off any gelatin on the surface. If they are a bit large, you can cut them in half, or score them to ensure even cooking.
