Ingredients
- 1 head red radicchio from Treviso IGP, early (or Verona radicchio)
- 2 oz feta
- 1 orange
- 3 walnuts (or toasted hazelnuts)
- raisins (to taste)
- extra virgin olive oil

Preparation
Cut the radicchio into 4 parts, wash and dry it. Arrange it in a baking dish, without overlapping.
Squeeze the juice of an orange and pour it into a small bowl. Add a pinch of salt, a grind of pepper, and a drizzle of olive oil.
Emulsify with a fork or a whisk.
Pour the dressing over the radicchio, ensuring it penetrates between the leaves.
Dry the feta, cut it into slices, and crumble it over the radicchio. Then add the walnuts broken into pieces and a handful of raisins, if you like, previously soaked and drained.
Place the baking dish in a fan oven at 375°F and bake for 10-15 minutes, or until the radicchio is tender and the feta is slightly golden.
