AUTUMN CAKE the perfect recipe for a sweet autumn

Soft, tender, and delicious autumn cake. Autumn arrives with its cooler and shorter days but also with many delicious aromas and flavors. We no longer indulge in simple, quick, and light recipes, perhaps no-bake, but it is time for rich and delicious baked desserts. So today I’ve prepared a dessert with the most typical ingredients of this newly started season, which remains my favorite. Pumpkin, apples, dried plums, walnuts, and cinnamon are the ingredients of a soft, moist, and delicious cake that filled my entire house with its delightful aroma. The blended pumpkin added to the batter makes it very soft, moist, and delicious, and to complete the softness, you find many cubes of apples and dried plums. This is the perfect dessert with a cup of hot tea on these first gray and cold days. I’ve also added whole wheat flour to the batter for an irresistible rustic flavor! Ingredients for Pumpkin and Apple Cake

  • 2 eggs
  • 110 sugar
  • 3 1/2 tbsp vegetable oil
  • 7 oz pumpkin (cleaned)
  • 2 1/2 oz dried plums (pitted)
  • 1 apple (about 9 oz)
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 1/2 oz walnut kernels
  • 1 tsp cinnamon powder
  • 1/2 packet baking powder (8 grams)
  • as needed powdered sugar (for decoration)

How to Make the Autumn Cake

  • Peel and clean the apple, cut it into small cubes.

  • Clean the pumpkin, cut it into cubes, and blend it in a mixer or blender with vegetable oil to obtain a delicious orange cream

  • Beat the 2 whole eggs with the sugar using an electric mixer for 7-8 minutes until you have a light and frothy mixture.

  • Add the pumpkin cream and mix.

  • Continue the preparation by adding the sifted white and whole wheat flour.

  • Add the cinnamon and baking powder. Mix

  • Add the apple cubes, chopped dried plums, and walnut kernels pieces. Mix with a spatula to blend them into the batter

  • Pour the batter into a 20-22 cm diameter pan, oiled or lined with parchment paper, and level with a spatula.

  • Bake the Apple, Pumpkin, and Plum Cake in a preheated static oven at 355°F (180°C) for 35-40 minutes. Always do the toothpick test to check the internal cooking of the cake

  • Let the Pumpkin Cake cool before transferring it to a serving plate and decorate as desired with powdered sugar

Loredana’s Tips

If you prefer, you can replace the vegetable oil with 1 3/4 oz of melted butter to blend with the pumpkin

You can choose to use only white flour or substitute whole wheat flour with oat or buckwheat flour
