- 10.5 oz chicken (deboned thighs or breast)
- 5.3 oz tomato puree
- 2 oz provola cheese
- oregano
- basil
- rice flour (or other flour)
- extra virgin olive oil

Preparation
Clean the meat by removing any veins, bones, or fatty parts. I used deboned and skinned thighs, but other chicken parts like the classic breast work too.
Cut the chicken into strips and coat them in rice flour (or another flour of your choice).
Heat a frying pan with a drizzle of olive oil, add the strips, and brown them over high heat for a few minutes (1), season with salt and pepper.
Add the tomato puree and a handful of oregano (2). Lower the heat slightly and cook the meat: if you used breast, it will take just a few minutes, you’ll need a few more if you chose thighs.
Finally, add the provola, cut into small cubes (3). Put a lid on and let it cook for just a moment, just enough time to melt it.
