Ingredients for Breaded and Fried Anchovies
- 1.3 lbs anchovies
- 2 eggs
- 1/3 cup flour
- to taste salt
- 1 1/4 cups vegetable oil (for frying)
How to Prepare Fried Anchovies with Eggs
Clean the anchovies. Open them like a book and remove the head along with the bone. Also remove the entrails. Try to keep the tail that holds the two parts of the fish together. Rinse them under running water and let them dry on kitchen paper.
Beat the eggs with a little salt in a bowl. Coat the anchovy fillets in the flour, making sure it adheres everywhere. Heat plenty of vegetable oil in a small and deep pan.
Dip the floured anchovies in the eggs, drain them and then plunge them into the hot oil. Let them brown on all sides. Drain them on kitchen paper and serve them hot with some lemon if you like
