  • 1/3 cup milk
  • 1/3 cup all-purpose flour

  • 2 tbsp sugar
  • 3 tbsp butter

Preparation

  • Soak the raisins in a bowl with lukewarm water.

    Peel the apple, remove the core, and cut it into cubes.

    Melt 2 tbsp of butter in a pan (the same one you will use later to cook the omelet), add the apples, and let them brown for 4-5 minutes (1).

    When they are ready, transfer them to a plate to cool.

  • Separate the egg yolks from the whites. With the mixer, whip the whites until stiff and set aside.

    Put the yolks in a bowl, add the sugar and a pinch of salt. Beat with the mixer for 2-3 minutes.

  • Add the milk and sifted flour. Mix with the mixer until a smooth batter is obtained.

    Now add the apples and the well-drained and dried raisins with a paper towel.

    Finally, fold in the whipped whites gently from bottom to top (2).

  • Take the pan again and melt the remaining 2 tbsp of butter.

    Pour the batter (3) and cook for 3-4 minutes over medium heat until a crust forms at the base. With a spatula, divide the omelet into 4 parts and flip it onto the other side.

    Continue cooking for 2-3 minutes, then “break” the omelet into irregular pieces with the help of the spatula or a spoon.

  • Transfer the warm schmarren onto a serving plate and sprinkle generously with powdered sugar.
