Flatbread with Zucchini and Carrots

Flatbread with zucchini and carrots crunchy and tasty. The recipe I want to share with you today is for a thin and crispy Focaccia with carrots and zucchini that is super simple and quick to prepare. In just a few minutes and without pre-cooking the vegetables, you can make it and then immediately bake it. It’s so good and delicious that even my son, who doesn’t really like zucchini, loved it. A special idea for dinner, for a tasty appetizer, or simply to prepare something special to surprise your family or guests in a few minutes. Ingredients for Crunchy Flatbread with Zucchini

  • 14 oz zucchini
  • 9 oz carrots
  • 1 cup flour
  • 1 cup water (cold)
  • 1/2 cup grated parmesan
  • 3 tbsps extra virgin olive oil
  • to taste salt

How to Prepare the Zucchini and Carrot Flatbread

  • Wash the zucchini and peel the carrots. Using a wide-holed grater, grate the carrots and zucchini onto a cloth placed inside a bowl. Close the cloth and squeeze to remove the water from the vegetables.

  • Pour the cold water into a bowl. Add a pinch of salt and the flour gradually, mixing with a whisk. Also add the grated parmesan and 2 tablespoons of olive oil, continuing to mix. Finally, add the grated vegetables and mix with a spatula to incorporate them into the batter.

  • Oil a rectangular baking tray, mine measures 11.5 x 8.5 inches. Pour the mixture into it, leveling it with a spatula. Oil the surface. Bake the Flatbread with carrots and zucchini in a preheated oven at 392°F in static mode for 25 minutes.
