- 10.5 oz portobello mushrooms
- 1 clove garlic
- 1 bunch parsley
- 1 pinch chili pepper (to taste)
- soy sauce
- extra virgin olive oil

Preparation
Clean the mushrooms by removing all soil residue, wipe them with a damp cloth, and dry with paper towels. If necessary, remove a small piece of stem to make them flat.
Brush them with a little extra virgin olive oil, then place them on a pan or non-stick griddle.
Cook them over medium heat, turning them on both sides (1-2) and adding a pinch of salt. It will take 10-15 minutes, depending on the thickness; check they are tender by inserting a toothpick.
While they cook, prepare the seasoning: peel the garlic and press it into a small bowl, add the chopped parsley, a pinch of chili pepper (to taste), one or two tablespoons of soy sauce, and a drizzle of extra virgin olive oil.
Mix well with a fork.
