- 1 apple
- 1 pear
- 1 cup all-purpose flour
- 1/3 cup milk
- 4 tbsps butter
- 1/2 cup sugar
- 1 egg (small, or 1/2 large)
- 1 tbsp baking powder
- 4 amaretti (to taste)

Preparation
Melt the butter in a saucepan and let it cool.
Peel the apple and the pear, remove the core and cut them into small cubes. Place them in a bowl and sprinkle with lemon juice to prevent them from browning.
The weight of the fruit, net of waste, should be about 8 oz.
With the mixer, beat the egg with the sugar. If you have a medium or large egg, weigh 1 oz.
Add the melted butter and mix, still using the whisk.
Add the sifted flour and baking powder, alternating with the milk. You will get a very soft but not liquid mixture.
Line the baking pan with parchment paper, pour the batter in and level it (1).
Distribute the apple and pear cubes over the entire surface (2), finally (if you like) add the amaretti, crumbled by hand.
Put the dessert in a static oven at 350°F (or convection at 340°F), and bake it for about 35 minutes (3). Adjust according to your oven, and always do the toothpick test before turning it off.
The apple and pear cake is ready, let it cool well then cut it into squares. If desired, you can dust the surface with a little powdered sugar.
Tips and Notes
If you don’t have a square baking pan, you can use a regular round pan with a diameter of 22-23 cm.
You can replace butter with 40 g of seed oil. You can replace milk with a plant-based drink of your choice.
You can omit the amaretti if you don’t like them, I added them because they absorb any excess liquid and give crunchiness to the surface of the dessert.
