ORECCHIETTE WITH BELL PEPPER CREAM AND STRACCIATELLA the pasta that brings joy to the table

Orecchiette with bell pepper cream and stracciatella, the first course that wins everyone over at the table. The orecchiette is the typical pasta shape from my region. I confess that I rarely prepare them by hand because I am so so slow that it takes me hours to make them. So I resort to those from the pasta factory but always choosing fresh ones. Today I found some delicious burnt wheat orecchiette with a rustic and special flavor. The burnt wheat, as my mother-in-law Adriana used to tell me, was many years ago obtained from the ears of wheat left over from the harvest in the field which, after the burning of the stubble, left charred wheat grains on the ground. A necessity of poor cuisine that recovered these dark grains with a bitter taste and used them to prepare flour for pasta and bread-making. Now the burnt wheat flour is obtained more simply from a toasting of the grains and has become a beloved ingredient by many chefs, rich in proteins, minerals, and gluten-free. I roasted the peppers in an air fryer, but you can also do it on a grill or in the oven. And if you don’t like orecchiette, you can use another pasta shape, either long or short. Ingredients for Pasta with bell peppers and stracciatella

  • 18 oz bell peppers
  • 14 oz burnt wheat orecchiette
  • 7 oz stracciatella
  • 1.4 oz grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • to taste salt

How to prepare Orecchiette with bell pepper cream and stracciatella

  • First, roast the bell peppers. Wash the peppers, dry them, and coat them with oil. You can cook them on a grill, in the oven, or in an air fryer. When they are well-charred on all sides, transfer them to a food bag or paper and let them cool. This way, it will be very easy to peel them.

  • Peel the peppers, removing the seeds and internal filaments. Transfer them to a hand blender cup. Add a bit of salt, the grated Parmesan cheese, and 3 tablespoons of extra virgin olive oil. Blend to obtain a delicious bell pepper cream. Cook the burnt wheat orecchiette or even the classic orecchiette in salted boiling water.

  • Drain the orecchiette al dente, keeping a little of the cooking water. Pour the orecchiette into a bowl and season with the bell pepper cream. Mix well, and to make the dish creamier, you can add a few tablespoons of pasta cooking water. Serve the pasta adding abundant and fresh stracciatella on the orecchiette.
