Crunchy and tasty zucchini meatballs in an air fryer. The recipe I want to share with you today features my beloved zucchini. I prepared some simple and delicious zucchini meatballs that I cooked in my air fryer, but you can also fry or bake them. I simply grated the zucchini thinly and then prepared the meatballs, simple, quick, and delicious. Ingredients
- 0.88 lbs zucchini
- 1 cup breadcrumbs
- 1 egg
- 0.56 cups grated Grana Padano
- 5.3 oz scamorza cheese
- 1.35 tbsp vegetable oil
- 1 bunch parsley
- to taste salt

How to prepare Zucchini Croquettes
Wash the zucchini, trim one end, and using a coarse grater, shred them into thin strips. Squeeze the zucchini with your hands to remove the water inside and transfer them to a bowl. Add an egg, a pinch of salt, and chopped parsley.
Add the grated cheese, diced scamorza, and 5 tablespoons of breadcrumbs to the zucchini. Mix the mixture well, first with a fork and then with your hands. Now form the meatballs: take a bit of the mixture and compact it in your hands to form a meatball.
Form all the meatballs in the same way until the mixture is finished and roll them in breadcrumbs, ensuring it adheres well all over. Now you just need to cook the Zucchini Meatballs. I cooked them in an air fryer: place them in the fryer basket, spray with vegetable oil, and let them cook for 12-14 minutes at 392°F, turning them halfway through cooking.

If you prefer, you can fry the meatballs or bake them at 374°F for 18-20 minutes
You can store the meatballs in a container in the fridge for 2 days or you can freeze them, either cooked or raw
