Ingredients for Shrimp Risotto

  • 1 2/3 cups Carnaroli rice
  • 1.1 lbs shrimp
  • 3 1/3 cups vegetable broth
  • as needed extra virgin olive oil
  • 1/2 glass white wine
  • 4 tbsps tomato puree
  • 1 bunch parsley
  • 1/2 white onion
  • as needed salt
  • pinches pepper

How to Prepare Shrimp Risotto

  • First, clean the shrimp by removing the head, shell, and the black intestinal vein. Pour 4 tablespoons of extra virgin olive oil into a saucepan, add the chopped onion and shrimp. Slightly sauté over medium heat and also add the rice to the saucepan.

  • Let the rice toast for 2 minutes, stirring often with a wooden spoon. Now pour in the white wine and let it evaporate. Continue preparing the Shrimp Risotto by adding the tomato puree and a ladle of hot vegetable broth.

  • Let the broth be absorbed before adding more and bring the rice to cook this way. It will take about 18-20 minutes. At the end of cooking, adjust the salt, add a pinch of pepper, and the chopped parsley. Let it rest for 2 minutes before serving it at the table.

Loredana’s Tips

For this recipe, you can use either fresh shrimp as I did, or frozen shrimp

Adding tomato puree makes the risotto creamier and gives it a nice pink color, but you can omit it if you prefer

For an even tastier risotto, you can use a broth with the addition of shrimp shells
