I confess that I make Apple Cake when I want to spoil myself and my little family because this is a dessert that always has a therapeutic power. The recipe I want to tell you today is that of a soft, fluffy, and creamy cake that wins the heart at the first slice! Do you like Apple Cakes? Ingredients for the Soft Apple Cake
- 2 eggs
- 4 oz sugar
- 1 cup all-purpose flour
- 1/3 cup potato starch
- 1.3 lbs apples
- 1/4 cup milk
- 1/4 cup corn oil
- 1/2 lemon zest (untreated)
- 1/2 packet baking powder (8 grams)
- to taste powdered sugar
How to prepare the Very Soft Apple Cake
Wash the apples. Peel half of the apples and cut them into cubes. Slice the others thinly without peeling them first. Beat the 2 whole eggs with the sugar for 8-10 minutes until light and frothy.
Preheat the oven to 338°F. Add to the beaten eggs the corn oil, milk, and the grated zest of half a lemon. Mix and continue the preparation by adding the flour and potato starch sifted with the baking powder.
Finally, add the cubed apples and simply mix with a spatula. Oil and flour an 8-inch diameter cake pan. Pour the mixture inside leveling it with the spatula. Arrange the apple slices all around and in the center, slightly overlapping them.
Sprinkle the surface with a little granulated sugar. Bake the Soft Apple Cake in the hot oven in static mode for 35-40 minutes. Place the Cake low in the oven.
Always do the toothpick test to check the cake’s internal baking. Let it cool before turning it out onto a serving plate and sprinkle it with powdered sugar as desired.

If you prefer, you can peel the apple slices before arranging them on the Cake
The Apple Cake keeps soft in a container for 2-3 days
If you prefer, you can replace the corn oil with 2 oz of melted butter and the milk with rice or soy plant milk, or even with 1/4 cup of plain yogurt
You can also replace the potato starch with the same amount of flour, although I recommend using the starch to make the dessert lighter and crumblier
