Crispy on the outside and tender on the inside. That’s how air fryer potatoes are. A simple, quick, and super tasty side dish that shows how simplicity is sometimes the key to deliciousness! They are really easy to make. I cut them into wedges, leaving the skin on for that rustic touch I adore, then drizzled them with a bit of oil, salt, pepper, and herbs, and off they go… straight into the friggy (as I love to call it). The result was perfect: golden, flavorful, and light, without the need to add more oil. Perfect as a side for any dish (meat, fish, eggs) or to munch on just made, maybe with a sauce next to it. Try them and you’ll see you won’t want to prepare them any other way!

Ingredients for Air Fryer Potatoes
- 2 potatoes (medium-large)
- 1 sprig rosemary
- 2 leaves sage
- extra virgin olive oil
- salt
- black pepper

Preparation of Air Fryer Potatoes
Wash the potatoes thoroughly, scrubbing the skin vigorously with a brush. In this recipe, I keep the skin on, but if you prefer, you can remove it.
Dry them by patting with kitchen paper and cut them into quarters lengthwise, then slice each quarter into wedges. I really like this shape, but you can also simply chop them up. In either case (wedges or chunks), I recommend making them all roughly the same size for even cooking.
Transfer them into a bowl and season with a drizzle of oil, salt, pepper, and a mix of chopped sage and rosemary. Mix well so that the seasoning is distributed on all sides of the potatoes.
Then place the wedges in the basket of the preheated air fryer (of course, if your fryer has this setting) trying not to overlap them too much. If you decide to use parchment paper, remember to perforate it to allow proper air circulation, or use pre-perforated sheets.
Cook at 392°F for 20 minutes, stirring them halfway through cooking. This will ensure a truly perfect cook. If you haven’t preheated the fryer, you may need to extend the cooking time by a few minutes.
When cooking is complete, the air fryer potatoes will be crispy and golden on the outside and tender on the inside. Serve them immediately, very hot. Enjoy! Paola
