Ingredients for Cod Fillets with Paprika
- 21 oz cod fillets
- Half onion
- Half clove garlic
- 2/3 cup vegetable broth
- 1 teaspoon cornstarch
- paprika (to taste)
- 1 sprig parsley
- extra virgin olive oil
- salt
- black pepper

Preparation of Cod Fillets with Paprika
Defrost the cod fillets and pat them dry with paper towels. I transferred them from the freezer to the fridge the night before.
In a large pan, heat a few tablespoons of oil and sauté the chopped onion and garlic.
Let them sizzle for a moment, then pour half a ladle of hot broth from the total amount and the paprika (you can adjust it to taste). Stir immediately for a few seconds.
Then, place the cod fillets in the pan and let them absorb the flavors on both sides, turning them gently with a spatula.
Now pour the remaining hot broth into the pan. Cover with a lid and continue cooking over low heat for 5 minutes.
Meanwhile, dissolve the cornstarch in a tablespoon of water.
After the first 5 minutes of cooking, turn the cod fillets and pour the cornstarch mixture into the pan.
Allow the sauce to thicken over medium heat for a couple of minutes until it becomes creamy. If desired, sprinkle the fillets with more paprika. We love it, so I added more.
Finally, adjust the salt and pepper and garnish the cod fillets with chopped parsley.
