Lemon Scented Chicken Bites (and More)

Even a simple recipe can be very appetizing, and these lemon-scented chicken bites (and more!) are proof of that: just a few ingredients, a skillet, and in a few minutes, you’ll have a dish full of flavor and Mediterranean aroma. The hardest part was coming up with the title! Because believe me, making this recipe is really within everyone’s reach: the chicken is well browned as I like it; the lemon adds freshness; capers, olives, and friggitelli add character and the final basil completes it with an irresistible note. In short, a light but full of taste main course, perfect to bring to the table in any season. And remember: if I managed to come up with the title, you will certainly be able to cook it!

Ingredients for Lemon Scented Chicken Bites

Please choose an untreated lemon, because in this recipe it is used with the peel. The peel of common lemons is not edible.

  • 1.3 lbs chicken breast
  • 1 lemon (untreated)
  • 1.8 oz Taggiasca olives
  • 1 tbsp capers (salted or pickled)
  • 3.5 oz friggitelli peppers
  • 0.3 cups dry white wine
  • A few leaves basil
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Lemon Scented Chicken Bites

  • Wash the lemon, cut it into pieces, and remove all the seeds. 

  • Clean the chicken breast by removing the cartilage, the central bone, and any fatty parts, then cut it into bite-sized pieces. 

  • Clean the friggitelli peppers by removing the stalk, then cut them in half, remove all the seeds, and cut into strips.

  • In a large skillet, heat a few tablespoons of oil before adding the chicken pieces and lemon pieces. Brown them over high heat for 5 minutes, stirring often, then pour in the white wine and let it evaporate.

  • Then, add Taggiasca olives, previously rinsed capers, and friggitelli. 

  • Continue cooking over medium heat for 7/8 minutes, stirring occasionally. 

  • A couple of minutes before the end of cooking, salt and pepper to taste and add some basil leaves, torn by hand. 

  • At the end of cooking, the lemon-scented chicken bites should be golden. Serve them immediately while hot. Enjoy! Paola.
