Ingredients

  • 10.5 oz broccoli
  • 1 egg
  • 2.8 oz grated Parmigiano cheese
  • 2 tbsps flour
  • to taste salt
  • to taste breadcrumbs (for breading)
  • A few sprays extra virgin olive oil
  • to taste black pepper

Steps

  • Boil the broccoli in salted water for about 10 minutes, until soft. Drain, place them in a bowl and let them cool slightly.

  • Mash the broccoli roughly with a fork or a potato masher.

    Add the egg, Parmigiano, flour, salt, and black pepper. Mix well until a homogeneous mixture is obtained.

    With damp hands, take small portions of the mixture, form meatballs, and then roll them in breadcrumbs for a uniform breading.

  • Place the meatballs in the basket of the air fryer, spray a little extra virgin olive oil and cook them at 356°F for 15-18 minutes, turning them halfway through cooking to brown evenly.
