A rich and tasty side dish, gratinated tomatoes are what I prepare when I want to make my daughter happy because she loves them. And like her, I devour them too. In the summer, it is a dish I enjoy not only eating but also preparing because they are delicious warm, but also cold, so we can easily prepare them in advance and find them ready in the evening when we maybe return from a trip or the beach. Ingredients for preparing gratinated tomatoes
- 3 vine tomatoes
- 3/4 cup breadcrumbs
- to taste parsley (chopped)
- 2 cloves garlic
- to taste chives
- to taste extra virgin olive oil
- 1 tbsp desalted capers
- to taste salt
- to taste pepper

Preparation of gratinated tomatoes
Let’s prepare the recipe for arraganated tomatoes: wash our tomatoes, cut off the top, scoop out the pulp, lightly salt the inside, and place them upside down on a cutting board to drain the juice.
In a bowl, combine the breadcrumbs and chopped garlic with chives, parsley, and desalted capers. Mix, adding as much extra virgin olive oil as needed to form crumbs.
Transfer the tomatoes to a baking sheet, fill them with the prepared mixture, drizzle with a little oil, and bake for about 30 minutes at 350°F. The tomato recipe will be ready when our tomatoes have a nice golden crust. Serve hot, but if you have leftovers, enjoy them cold too, they will be a real delight!!!
Storage
You can store the tomatoes in the fridge for a couple of days.
Variations of gratinated tomatoes
With feta and herbs: Crumbled feta adds a strong flavor, while the mix of thyme, rosemary, and basil enhances the freshness of the dish.
Breadcrumbs and olives: Finely chopped black or green olives provide an irresistible Mediterranean note, perfect for a more intense taste.
Capers and pecorino: Capers offer a pleasantly salty contrast of flavors, while pecorino makes them even crunchier.
Ricotta and walnuts: Ricotta creates a delicate and creamy filling, while chopped walnuts add a crunchy texture.
Pistachios and parmesan: Chopped pistachios add a slightly sweet and crunchy note, ideal for an original and refined dish.
With whole wheat bread and almonds: Whole wheat breadcrumbs and chopped almonds make the gratin more rustic and flavorful.
