Today I present to you an easy and quick recipe to use when you have little time or no ideas. It’s a simple pasta with tomatoes and potatoes; a tasty and nutritious pasta suitable for everyday cooking. You will be surprised by its goodness.

Ingredients for Pasta with Tomatoes and Potatoes
- 11 oz pasta (any shape)
- 12 oz tomatoes (weight without waste)
- 12 oz potatoes (weight without waste)
- 1 clove garlic
- 1.75 oz green olives in brine (drained weight)
- 2 tablespoons tomato paste
- extra virgin olive oil
- salt
- black pepper

Preparation of Pasta with Tomatoes and Potatoes
Wash the tomatoes and cut them into small pieces.
Drain the green olives from the brine and chop them coarsely with a mezzaluna.
In a large pan, heat a few tablespoons of oil and sauté the previously peeled and chopped garlic. If you don’t particularly like it, you can keep it whole and remove it at the end of cooking.
Let it sizzle for a moment, then add the tomatoes and brown them over high heat for a couple of minutes before adding the green olives.
Season with salt and pepper to taste, add two tablespoons of tomato paste, lower the heat slightly, and continue cooking for 4/5 minutes, stirring often.
In the meantime, peel the potatoes, wash them, and cut them into small pieces.
Place a pot of salted water on the stove, bring it to a boil, and throw in the potatoes along with the pasta.
Drain them al dente and transfer them directly into the sauce pan, keeping a little cooking water that will be used to soften the sauce, if necessary.
Mix well to combine all the ingredients and season with plenty of chopped parsley.
Distribute the pasta with tomatoes and potatoes onto individual plates, sprinkle with freshly ground pepper, and serve immediately, piping hot. Enjoy! Paola
