Separate the egg yolks from the whites. Add the sugar to the yolks inside a bowl and whip with electric beaters for three minutes until frothy.
Sift the flour into a bowl along with the packet of baking powder, vanillin, and a pinch of salt. Add the liquids, water, and oil, and mix with beaters until a smooth batter is obtained. Add the grated lemon.
After whipping the egg whites to stiff peaks, gently fold them into the batter using a spatula. Add them gradually using a folding motion from bottom to top to incorporate.
Grease with butter and flour the chiffon cake mold or a ring-shaped cake pan and pour in the batter.
Bake in the preheated oven at about 340 degrees Fahrenheit for about forty-five minutes. Before removing from the oven, perform the toothpick test to check doneness. If the toothpick comes out dry, the cake is well-cooked.
