Carrot Tops in a Pan with Sun-Dried Tomatoes

Steps

  • Separate the green leaf tops from the carrots. Discard any damaged stems and leaves.

  • Wash the carrot leaves thoroughly in plenty of water two or three times. Boil them in a pot with salted water for three to four minutes. Drain, let cool, and chop the greens.

  • Prepare a pan with extra virgin olive oil and brown the finely chopped garlic. Add the greens and sun-dried tomatoes.

  • Cover the pan with a lid and stir occasionally. Add a little water if needed. Cook for about fifteen minutes.
