Piedmontese Green Sauce Parsley Dressing for Pasta and Bread

I created this special sauce to dress pasta and bread commonly called Piedmontese green sauce or green sauce made with plenty of parsley.

I refer you to the original ancient recipe that originated in Piedmont from which it takes its name. The Piedmontese used this sauce to serve boiled meat for flavoring. Over time, there have been more and more variants, but the base is always fresh parsley, preferably organic.

Ingredients

  • 4.2 oz parsley (fresh)
  • 3 anchovies
  • 2 cloves garlic
  • 1/4 cup Oil
  • 1.8 oz bread crumbs
  • to taste vinegar
  • 1 tablespoon capers
  • hot chili pepper (optional)

  • First, clean the parsley. Remove yellowed leaves and part of the stems if they are too long. Leave the parsley to soak for about fifteen minutes. Wash at least twice.

  • Drain the parsley and dry well with a cloth. Roughly cut with scissors and pour into the food processor.

  • Add all the other ingredients: desalted anchovies, peeled garlic, capers, chili pepper to taste, bread crumbs soaked in vinegar, oil, and blend for five to seven minutes.

  • Finally, pour the obtained sauce into containers and freeze if not consumed immediately. The Piedmontese green sauce is very suitable for dressing spaghetti. A fragrant parsley pesto that will also make fish more appetizing.
