Ingredients
- 10.5 oz pasta (fusilli, penne, or rigatoni)
- 3.5 oz dried tomatoes
- 1.75 oz almonds (or pine nuts)
- 2 cloves garlic
- 8 leaves basil
- 1/4 cup extra virgin olive oil
Steps
Place the dried salted tomatoes in a small pot covered with water and boil for about ten minutes.
Wash the zucchini and cut into chunks. Cook the zucchini in a non-stick pan with a drizzle of oil and one garlic clove to remove later, for about twelve to thirteen minutes.
Meanwhile, bring water to a boil for the pasta and cook it al dente according to the cooking time indicated on the package.
Drain the pasta, put it back in the pot and add the zucchini. Finally, pour in the obtained dried salted tomato pesto and serve hot at the table, decorating the pasta with dried salted tomato pesto and zucchini with a few basil leaves.
