I recently discovered cold farro with zucchini and cherry tomatoes, and it will be part of my summer menu. Excellent for replacing rice salad and cold pasta. A convenient and practical dish to carry in a cooler bag to share at the beach. Moreover, I find it light and pleasant. It remains al dente even the next day without losing flavor. Ingredients
Whole farro grains Here on Amazon 
- 1 1/4 cups farro (Preferably organic)
- 1 zucchini (large)
- to taste black olives
- 7 cherry tomatoes
- to taste salt
- to taste extra virgin olive oil

Steps
Soak the farro for at least three hours in a bowl. Drain and cook in a pot with plenty of water for about thirty minutes.
Meanwhile, wash the zucchini and cut it into cubes. Cook for about ten minutes on low heat in a pan with two to three tablespoons of extra virgin olive oil. Cover with a lid and check the cooking. Add half a cup of water if necessary.
Prepare the cherry tomatoes, cut into pieces, and the olives.
Drain the farro, let it cool, and add the cooked zucchini, cherry tomatoes, and olives. Mix and finally let it rest in the fridge for an hour.
The farro salad with zucchini, cherry tomatoes, and olives can also be enjoyed warm and in winter is appreciated hot. For the beach, it is ideal to prepare it in the indicated way.
