Shell the fresh fava beans and weigh them on the scale until you reach 300 g. This is the only challenging part of this recipe, but it’s worth it.
Put two tablespoons of oil in a pan and add the shelled fava beans. Brown them and pour in a glass of water. Salt and cook over moderate heat for about fifteen to twenty minutes.
Taste the fava beans to check the cooking and pour them into the food processor. Blend with the fresh mint leaves for two minutes.
Meanwhile, put a pot with enough water on the stove to cook the spaghetti. Cook for about twelve minutes from boiling and drain.
Mix the pasta with the fava bean cream obtained and finally serve at the table. Eat this fabulous, genuine, and nutritious first course hot.
