Lactose-Free and Gluten-Free Hot Chocolate

Lactose-free hot chocolate, one of the most loved drinks of this period, when the first cold starts and afternoons are made of cups full of chocolate. The version I present to you today is lactose-free, gluten-free, and without added sugars. Despite all these ‘without’, this drink is a delicious treat worth trying. Everyone loved it, especially Francesca. She doesn’t like sweet things, and this chocolate is perfect! I prepared it using oat milk, but you can replace it with other lactose-free drinks of your choice, and to sweeten it, but not too much, I replaced granulated sugar with erythritol, a natural sweetener used as a sugar substitute. It looks and tastes just like sugar but has zero calories. Also, it has a negligible glycemic index. It only has one drawback, which is its high cost, but with all these advantages, I think it’s absolutely worth it. Of course, we need to make this treat even more indulgent, and you can choose to add marshmallows, as I did, or a delicious mountain of whipped cream, which you can also sweeten with erythritol if you prefer.   • 1/4 cup gluten-free cocoa powder
  • 2 tbsp potato starch
  • 1/4 cup erythritol
  • 1.75 oz dark chocolate
  • marshmallows (to taste)

Steps

  • First, heat the drink in a small pot until it’s about to boil. Meanwhile, chop the chocolate and, as soon as the drink is hot, add the chocolate and stir until it melts. In another pot, mix the powders. Then add the cocoa, starch, and erythritol. Next, pour the oat milk, stirring with a whisk to avoid lumps. Then bring to the stove and cook for 3 minutes, until the drink thickens.

Storage and Tips for Lactose-Free Hot Chocolate

The hot chocolate can be stored in the refrigerator for 1 or 2 days in an airtight container with a lid to prevent it from absorbing other odors present in the fridge. Before drinking it, you should heat it over low heat, stirring to prevent lumps.
